Vinification

A careful sorting of the harvest is carried out when the grapes are picked and received.

Gentle pneumatic pressing with selection of the first juices.

Thermo-regulated fermentation between 14 and 16°C, followed by malolactic fermentation for half of our vats.

Aging for 6 to 8 months in oak barrels of a few vats and aging on fine lees until bottling
